How to cook them
Ask at the counter for timings: we cook these at home every week.

Whole in the oven with fennel, or fillets skin-side down in a hot pan
Hake
Thick steaks, roasted or poached; soft and flaky
Pollack
Fish pie, fish cakes or battered; a good, cheaper cod
Black bream
Whole on the grill, scored on both sides
Red gurnard
Whole roasted, or in a fish stew; ask us to take the spines off
