How a tasting goes
1
Look at the dry leaf
Colour, shape and smell, before any water touches it.
2
Brew side by side
Same weight, same water, same time for every tea, so only the tea is different.
3
Smell the wet leaf
Lift the lid of each cup; this is where most of the flavour shows.
4
Taste and talk
Slurp from a spoon, compare, and say what you taste. There are no wrong answers.
Come and taste first
The tasting table is open from 11:00 every day except Monday. Taste any tea on the shelf before you buy it; there is no charge.
